He's smiling as they're seated, just taking a moment to enjoy the pretty music and serene surroundings. It's the kind of atmosphere he tries to create for his customers, one that's restful and helps them clear the mind of their troubles. And he certainly needs to be able to cleanse himself of stress as well.
